quinoa and black bean taco salad {gf}

This quinoa and black bean taco salad is loaded with protein and fiber. It hits all the tastes I love about tacos and, since they are gluten and dairy free, I can enjoy them right along with my family!
I love how colorful this bowl is! It just looks like it is going to taste good. Yum!

{quinoa and black bean taco salad}
  • 1/2 cup quinoa
  • 1 T extra virgin olive oil
  • 1/2 a red bell pepper, chopped
  • 1/2 a yellow bell pepper, chopped
  • 1 small jalapeno, minced {adjust to suit your taste}
  • 1/2 a small red onion, small dice
  • 15 oz black beans, rinsed and drained
  • homemade taco seasoning
  • chopped cherry tomatoes
  • mixed baby greens
  • gluten free tortilla chips
  • chopped avocado
Start by heating the olive oil over medium heat and sautéing the bell peppers, onion and jalapeno until they are softened. Add up to a tablespoon of homemade taco seasoning, mixing well. Add the black beans and stir together. Continue over medium heat until beans are heated through.
Meanwhile, cook the quinoa by following the directions on the package. I usually go with a 2:1 ratio of water to quinoa. I go with 1 cup of water to 1/2 cup of quinoa. Bring the water to a boil before adding the quinoa. Reduce the heat, cover and simmer for about 12-15 minutes.

Now all that is left is to assemble your salad!
Make a bed of mixed greens to your bowl. Add half of each of the prepared quinoa and black bean mixture and top the greens with the chopped tomatoes and avocado. I like to add a few gluten free chips tucked on one side of the bowl for added crunch.  This recipe makes enough for two hungry adults.

About 6 months ago I did a total overhaul with my diet. Among other things, I made the decision to go gluten and dairy free due to some health issues I had been dealing with for several years. God was so gracious and allowed the change in my diet to make a huge change in the symptoms I had been experiencing. I am still in awe!
Being gluten and dairy free, this recipe is one of the many that I enjoy on a regular basis. I love the various textures! The sweetness of the sautéed veggies and the creaminess of the black beans is a yummy combination. Quinoa is such a powerhouse food and provides perfect protein to your diet. If you don’t already cook with quinoa, give this recipe a try.
I am hoping in the coming months to share more of the recipes that I am coming to love.

  1. :0)....YAY! A recipe for Taco seasoning. Beginning in January our family is going to be embarking on a total food make over. This will come in handy. I have done this 3 or 4 times in the past. Different stages and different reasons of life! I have 2 off to college and 2 teen boys still home---they love to eat :0)! I hope to blog about what I am learning and so this recipe is sure to make it there at some point :0).
    This time around is def a "money" thing. Since am not able to increase my food budget, the food budget now needs to work for me and so home made is on the list. I do love cooking...and this recipe looks YUMMMM! I just HAVE to find bean recipes that my kids will eat.
