oatmeal raisin bars


These {oatmeal raisin bars} are so yummy that my kiddos feel like they are getting dessert in the middle of the afternoon whenever I offer these as a snack. Add a glass of cold milk and they are over the moon for these moist and chewy bars. Since I'm controlling the quality of the ingredients, I can feel good about serving these bars up anytime they ask. They are just sweet enough and the addition of the honey and cinnamon create the perfect balance. 



{oatmeal raisin bars}
1/4 cup softened butter
1 cup light brown sugar, loosely packed
1 egg
2 Tbs ground flax seed
2 Tbs honey
2 cups rolled oats {not quick cooking oats}
1 cup unbleached all purpose flour
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 cup raisins

First, beat the butter and the sugar until crumbly with either a hand mixer or just a wooden spoon. This takes about 2 minutes by hand. Add the egg and beat well. Stir in the flax seed and the honey then set the creamed mixture aside.

In a small bowl, combine the oats, flour, cinnamon, and baking soda. 

Stir the oat mixture into the creamed mixture combining just until blended. Finally, gently stir in the raisins making sure they are well incorporated. 

Lightly spray a 9x9 pan with oil then pour in the oatmeal raisin mixture.

Bake at 350 degrees for 15 minutes or until edges are lightly browned and center is set. Cool completely on a rack before cutting into bars. {My husband usually grabs one warm straight from the oven! He is an oatmeal raisin cookie junky and can't resist these bars.}
